Breakfast Tostadas

What You'll Need

  • 8 corn tortillas
  • Canola oil spray
  • Light olive oil
  • 8 eggs
  • Sea salt and freshly cracked black pepper
  • 435g tin refried beans, reheated
  • 1 ripe avocado, peeled and thinly sliced
  • Tio Tito Taco Sauce with Paprika, to serve
  • Crumbled feta and coriander leaves, to serve

Instructions

Step 1

Preheat oven to 200ºC (180ºC fan).  

Step 2

Spray both sides of tortillas with canola oil, arrange in a single layer on baking trays and bake for 8 mins, turning half way, until crispy.

Step 3

While the tortillas are cooking add enough oil to a large frypan to come 1cm up the edges. Place over a medium-high heat then, once the oil is hot, crack 3-4 eggs in at a time, seasoning generously with salt and pepper, frying until crispy on the edges and the whites totally cooked. Remove fried eggs to a plate, repeat with remaining eggs.

Step 4

Spread 1 heaped tablespoon of the warmed, refried beans onto each crispy tortilla. Nestle a fried egg on top, then arrange over the sliced avocado. Drizzle Tio Tito Taco Sauce with Paprika, then shower with crumbled feta and coriander leaves to garnish.
