Mole-Braised Short Ribs

What You'll Need

  • 1 tbsp grapeseed oil
  • 2kg beef short ribs, seasoned with salt and pepper
  • 1 brown onion, peeled and cut into thin wedges
  • 2 cloves garlic, crushed
  • Tio Tito Smokey Mo-leh with Black Beans
  • 500ml chicken stock
  • Lime cheeks, red onion wedges, sliced jalapeno and coriander leaves, to serve

Instructions

Step 1

Preheat oven to 180ºC.

Step 2

On the stove, heat oil in a large, flameproof casserole dish over high heat. Brown all sides of the ribs, remove from pan. Let the casserole dish cool a bit before adding onions and garlic and cooking, stirring over a medium heat, until softened. 

Step 3

Add the ribs back to the dish, pour over the entire jar of Tio Tito Smokey Mo-leh with Black Beans, add chicken stock and stir to combine. Cover with the lid and bake in the oven for 2 1/2 to 3 hours or until the meat is very tender and falling off the bone.

Step 4

Transfer the ribs to a serving dish. Spoon over some of the braising liquid. Squeeze over lime cheeks, scatter red onion wedges, jalapeno slices and coriander to serve.
